As you can find out from watching the Good Eats episode on Eggs Benedict the venerable Thomas’ English Muffin is not really English (it was invented in NYC) and is a closer relative of the  crumpet than the muffin clan….but all that aside….Seems the company that now owns the brand is trying very hard to keep what must be one of the last great baking secrets from going walk about in the industry. As the NY Times reports in “A Man With Muffin Secrets, but No Way to Cash Them In.”  the secret is so valuable to the company they have gotten legal bars put on one of the few people who knows the full skinny of how the nooks and crannies get as they are.  A twisted tale of taste and toil.
